Preheat oven to 4...I love these blueberry muffins:<br /><br />Preheat oven to 400 degrees<br /><br />Whisk together:<br />2 c flour<br />1 Tbs baking powder<br />1/2 tsp salt<br />1/4 tsp nutmeg<br /><br />Whisk together in a different bowl:<br />2 eggs<br />1 c cream (milk if preferred)<br />2/3 c packed light brown sugar<br />4 to 8 Tbs melted butter (unsalted)<br />1 tsp vanilla<br /><br />Combine just until dry ingredients are wet. Add about 1 1/2 c blueberries (frozen or fresh). Divide batter into 12 muffin cups. Sprinkle tops with cinnamon and brown sugar. Bake for 15 minutes. You mix 6 TBSP. each of flour and sugar to 3 TBSP. of softened butter (not melted). Mix it together until combined and then put it on top when you bake. They come out crunchy and sweet. 2 cups bran cer...My favorite Bran Muffins!<br /><br />Combine<br />2 cups bran cereal (like 100% bran)<br />2 cups boiling water<br />And let cool.<br /><br />Cream <br />1 cup vegetable oil<br />2.5 cups sugar<br />4 eggs<br /><br />Mix In<br />1 quart buttermilk<br />4 more cups bran cereal<br />.5 lb. raisins<br /><br />Sift<br />5 cups flour<br />1.5 tsp. salt<br />5 tsp. baking soda<br /><br />Combine all ingredients and store in a covered container in the refrigerator.
