Growing up, when asked the highly-anticipated question, 'what cake would you like for your birthday?', I always requested a black forest cake. My mom would make the best boxed chocolate cake she could find and pair it with chocolate Jello pudding, cool whip and cherry pie filling. It's one of my favorite things she made growing up! While the following recipe may be considered a bit more sophisticated, it doesn't diminish how special that cake was to me. As far as I am concerned, any time chocolate and cherries get together, it's a <i>very</i> good thing.<br />
<br />
This version of a black forest cake infuses many of the baking ingredients I love most--rich cocoa, crème fraîche, amarena cherries and buttermilk. It's one heckuva quadfecta, I tell ya, and one I promise you will not regret using. If you're unfamiliar with <a href="https://amzn.to/2TYzSFV" target="_blank">amarena cherries</a>, they are small, wild black cherries from Italy and are typically packaged in a pretty jar soaked in syrup (you can read a brief, but sweet story about how they came to be <a href="https://en.wikipedia.org/wiki/Amarena_cherry" target="_blank">here</a>). Amarena cherries are delicious on yogurt, on ice cream, in fancy drinks, and of course with chocolate cake. I confess, I've been intermittently playing with this recipe for over a year now; pretty much making up excuses to make it as often as possible (work party? girls night in? Valentine's Day? a friend's birthday? Just because?!). Needless to say, it's become my most requested recipe this year.<br />
<br />
A few tips regarding saving money on some of the spendier ingredients: you'll find the best bang for your buck if you pick up your crème fraîche and amarena cherries at Trader Joes (the later is going to be available oh so soon). The crème fraîche (Bellwether Farms) is a few dollars cheaper at TJ's than at other markets and the cost savings on the cherries is even more significant. A small jar of amarena cherries can run between $13-20 online or at upscale grocery stores. However, at Trader Joes, they are just $3/jar...and also made in Italy. That being said, they only carry them during the holiday season, so it wouldn't be a bad idea to stock up if you anticipate enjoying this cake recipe as much as I do!<br />

<span style="font-size: x-small;"><i>a.k.a. Grownup Black Forest Cake; adapted from Soho House; makes three 9" round layers and plenty of frosting</i></span><br />

<u>Cake</u>:<br />

<span style="font-family: inherit;">1½ cups water</span><br />
<span style="font-family: inherit;">¾ c. + 2 Tb. Dutch process cocoa</span><br />
<span style="font-family: inherit;">2½ c. sugar</span><br />
<span style="font-family: inherit;">3 c. all-purpose flour</span><br />
<span style="font-family: inherit;">2¼ tsp. fine sea salt (if you've tried my recipes over the years, you'll know this is my go-to)</span><br />
<span style="font-family: inherit;">3¼ tsp. baking soda</span><br />
<span style="font-family: inherit;">1½ c. buttermilk</span><br />
<span style="font-family: inherit;">1 c. canola oil</span><br />
<span style="font-family: inherit;">1 tsp. pure vanilla extract</span><br />
<span style="font-family: inherit;">6 eggs</span><br />
<span style="font-family: inherit;">½ c. amarena syrup, setting aside the cherries for garnish</span><br />

<span style="font-family: inherit;"><span style="font-family: inherit;">1 c. (2 sticks) unsalted butter</span></span><br />
<span style="font-family: inherit;"><span style="font-family: "cambria";">1</span>½ c. dark chocolate chips</span><br />
<span style="font-family: inherit;">2½ tsp. pure vanilla extract</span><br />
<span style="font-family: inherit;">1 lb. bag powdered sugar, sifted</span><br />
<span style="font-family: inherit;">pinch of good salt (sel gris, fleur de sel, maldon, etc.)</span><br />
<span style="font-family: inherit;">7½ oz. container crème fraîche</span><br />

<u><span style="font-family: inherit;">Method: Frosting</span></u><br />
<br />
I suggest making the frosting first, as it will need time to set. To do that, melt the butter and chocolate in a metal bowl over a pot of boiling water (bain-marie). Note: if you use the metal bowl that comes with your stand mixer, you'll save yourself a step. Once the entire mixture is just barely melted, whisk until smooth--you'll want to make sure no lumps remain.<br />
<br />
Pour the butter/chocolate mixture into the bowl of a stand mixer fitted with the whisk attachment (unless you used the mixer bowl for the bain-marie). Add the pure vanilla extract and turn the mixer on to medium low. Start gradually adding the powdered sugar until the bag is empty (in a pinch, you don't have to sift the powdered sugar, but you may have lumps in your frosting as a result). The frosting may look like a bit of a hot mess, but don't worry...with the mixer still on medium low, gradually add the crème fraîche, a heaping spoonful at a time, until the container is empty. Your tangy, chocolate-y frosting should now be luscious, smooth and ready to set in a cool location.<br />
<br />
<u>Method: Cake</u><br />
<br />
Preheat the oven to 325 degrees. To make the cake, begin by bringing the water to a boil in a small saucepan. As soon as the water starts to boil, add the cocoa powder and begin vigorously whisking until the mixture is smooth. Immediately remove from the heat and set aside.<br />
<br />
Sift the dry ingredients into the bowl of an electric mixer. In a separate bowl, combine the buttermilk, oil and eggs. Whisk until smooth. With the mixer on medium low, add the wet mixture to the dry mixture and mix until smooth. Add the liquid cocoa mixture and combine until smooth and well-mixed (don't forget to lick the batter--it's amazing!). Pour the batter into three 9" greased cake pans* and bake for 25-30 minutes (the sweet spot for my old oven is 28 minutes). Allow to cool for 5 minutes in the pan, before releasing the cakes.<br />
<br />
Once released and cooling, poke the cakes with a skewer or fork. Pour the amarena syrup evenly over each of the three layers, while the cakes are still warm. Allow to continue cooling. Once cool, frost with desired amount of frosting and garnish the top of the cake with the amarena cherries you set aside earlier. If you prefer a semi-naked cake, you'll definitely have extra frosting. If this happens, I suggest making cupcakes :)...or sandwiching the remaining frosting between graham crackers (also a childhood treat).<br />

<span style="font-size: xx-small;">* I love the idea of buttering/flouring cake pans, but I confess I never have consistently good results getting a clean release. So, I've digressed to canola spray for much better results. For me, summertime is the season for camping, small trips to see family/cousins and for picking berries. The activity is both practical and enjoyable for kids (who doesn't want homemade jam in their lunches next schoolyear I remind them) and adults alike. We all get to munch while we pick, chat about this and that, and catch a few rays of sunshine (not to be taken for granted up here in the Pacific Northwest). Also, since we live in the city, it involves a trip to either the suburbs or the country, which is always refreshing as long as you don't get stuck in traffic :). <br />
<br />
This recipe is a personal favorite, as it encompasses so many things I love--mini desserts, fresh berries, slightly nutty flavor and a mix of warmth and coolness (if you serve with ice cream, which is a must in my book!). If you don't have access to tayberries, like we do up here in Washington, feel free to substitute cherries, a more classic "fruit rouges". Enjoy!<br />

<u>Fruit Rouges Crisp with Pistachios</u><br />

1 cup tayberries<br />
1 cup red currants,<br />
2 cups strawberries, halved (or quartered if the strawberries are big)<br />
3 cups raspberries<br />
Juice of 1 large lemon<br />
3 TB sugar<br />
<br />
2/3 cups all-purpose flour<br />
1/4 cup old-fashioned rolled oats<br />
1/2 cup dark brown sugar<br />
1/4 tsp. good quality sea salt<br />
1/4 cup chopped raw pistachios (<i>not</i> roasted, <i>not</i> salted)<br />
1/3 cup unsalted butter, melted and cooled<br />

Preheat oven to 375 degrees.<br />
<br />
In a medium/large mixing bowl, carefully mix the berries together, keeping them as intact (and unsquished!) as possible. Squeeze the lemon evenly over the berry mixture, before doing the same with the sugar. Note: I typically place a small sieve under the lemon to catch any unwanted seeds, but cheesecloth and sometimes your own hand will do just fine too. <br />
<br />
In another mixing bowl, gently whisk the dry ingredients together, starting with the flour and ending with the pistachios. Then, drizzle the cooled, melted butter over the dry ingredients. Using a wooden spoon, mix in the butter until a crumb forms (your clean hands may have to step in for a cameo here to make sure the mixture is thoroughly combined.) <br />

Divide the berry mixture amongst 6 individual gratin dishes or 8 ounce ramekins. Evenly sprinkle the crumble mixture over the berries (the dishes may appear to be on the verge of overflowing, but keep in mind everything will settle once baked in the oven). Slide dishes into a preheated oven for 30-35 minutes. Serve warm with a scoop of good-quality vanilla bean ice cream and you have yourself one heckuva summertime dessert!<br />

I subscribe to Gretchen Rubin's Happiness Project newsletter, which is essentially a daily reminder to find and create happiness in our own lives (versus allowing it to just fall upon you). There are only three ingredients, but they are good ones! One hundred percent guava juice is difficult to find, but not impossible! I use the Ceres brand from South Africa, which oddly turns up at the most random of places (my local drug store?). It's definitely worth seeking out. Sometimes, you can even find it on sale for around $3. When you do...stock up! <br />

When our family moved to Seattle three and a half years ago, I attempted my <a href="http://www.stephmodo.com/2010/03/perfect-chocolate-chip-cookies.html" target="_blank">usual chocolate cookie standby</a> only to find that it turned out completely different in my new location. Unrecognizable even. The cookie's identity crisis was likely due to the change in elevation and air moisture--which made sense--but was nonetheless disappointing. To where would I turn on a bad day without a go-to chocolate chip cookie recipe on hand? As a remedy to this unfortunate predicament, I then spent the new few years trying to revamp the recipe to my liking (this part my family and friends enjoyed a lot). I am not exaggerating when I say I've modified this recipe probably 20 times (and may continue to do so...who knows?!), as I tried to create what I felt was the perfect cookie.</div>

I am aware of the strong opinions out there regarding chocolate chip cookies. Some people like them soft, others crispy. Some like them puffy, and others like them more flat. Some like them with milk chocolate, and others enjoy them with dark chocolate. And last, some like them only dipped in milk and others prefer the cookie dough in its glorious, raw state. It's all a matter of personal preference, of course, which keeps us all on constant lookout for the perfect cookie. <br />

My version uses a good, semisweet chocolate; Guittard and Ghirardelli create fantastic chips and usually one of these brands is available at every standard grocery store. This recipe calls for eleven ounces of chips, which leaves a few left in the bag to munch on or to pawn off on your toddler (an ideal scenario if your child is like mine and begs for chocolate chips constantly). The easiest way to measure eleven ounces is to use a digital kitchen scale. They are an incredibly useful addition to every kitchen and cost around ten dollars. <a name='more'></a><b>Chocolate Chip Cookies with Gray Sea Salt</b><br />
<i>makes about 3 dozen</i><br />
<i><br /></i>
1 c. unsalted butter, room temperature (2 sticks)<br />
1 c. brown sugar, packed<br />
3/4 c. sugar<br />
1 tsp. pure vanilla extract<br />
2 eggs<br />
2 3/4 c. flour<br />
1 1/4 tsp. baking soda<br />
3/4 tsp. fine gray sea salt (plus more for garnish)<br />
11 oz. good quality semi-sweet chocolate chips<br />

Preheat the oven to 350 degrees. In the bowl of a stand mixer, place the butter, brown sugar and white sugar. Cream on medium high speed until light and fluffy (about 3-4 minutes). Add the vanilla and then the eggs, one at a time. Once mixed in, turn off the mixer and attend to the dry ingredients.<br />

In a small mixing bowl, whisk the flour, baking soda and gray sea salt. With the mixer on medium, slowly add the dry ingredients to the butter/sugar mixture until fully incorporated. Pour in the chocolate chips, with the mixer still on (lazy, I know), for about thirty seconds. Turn off mixer.<br />

Roll one inch balls of cookie dough and place them a couple of inches apart on an ungreased cookie sheet. Bake for 9 minutes sharp and then pull the cookie sheet out of the oven. Allow the cookies to sit for a few minutes before using a spatula to place them on a wire rack to cool. Sprinkle a little fine gray sea salt atop the cookies and allow them to continue cooling for an additional 5 minutes. This recipe is one of the most beloved in our home--we pretty much all go crazy for it! The combination of bananas, vanilla, buttermilk, good sea salt, hazelnuts and aromatic cardamom make it my go-to recipe when the bananas are past their prime. In fact, I buy a lot of bananas, just so I have an excuse to make this recipe. I can easily down one of these perfectly moist, mini loaves in one sitting; so be warned that it's dangerously delicious!<br />
<br />
If you want to save yourself some time (and I highly recommend you do so), buy pre-chopped hazelnuts. You can find them in the baking aisle at your local Super Target, QFC and sometimes at Fred Meyer and Harmons. Be sure to use good vanilla too--I like the Nielsen Massey (also at Target, Williams Sonoma, etc.) or the pure bourbon vanilla extract at Trader Joes. <br />
<br />
One last note on my Spiced Buttermilk Banana Bread with Hazelnuts recipe...when I decide to make banana bread, I don't want to just make one loaf. If I am going to the effort to make something from scratch, I want to make a lot! More to consume and more to share. This recipe will make either 3 large loaves (in standard loaf pans), 8 mini loaves or a combination of the two--4 mini loaves and 2 large loaves. It's really up to you!<br />
<a name='more'></a><b>Spiced Buttermilk Banana Bread with Hazelnuts</b><br />
<br />
1 c. unsalted butter, room temperature<br />
2 c. sugar<br />
4 large eggs<br />
2 teaspoons pure vanilla extract<br />
3 c. mashed ripe bananas (about 6-7 bananas)<br />
4 c. flour<br />
2 teaspoons baking soda<br />
1 1/2 teaspoons fine gray sea salt<br />
1/2 teaspoon ground cinnamon<br />
1/2 teaspoon ground cardamom<br />
1 c. buttermilk<br />
1/4 c. chopped hazelnuts <br />

Place the softened butter and sugar in the bowl of a stand mixer. Cream on medium high speed until light and fluffy, about 2-3 minutes. Add the eggs, one at a time (incorporating each egg before adding another). Pour in the pure vanilla extract and blend; and then last, the mashed bananas. <br />

In a small mixing bowl, whisk the flour, baking soda, gray sea salt, cinnamon and cardamom. With the mixer on medium speed, slowly add the dry ingredients to the sugar/butter mixture, alternating with the buttermilk. Start and end with the dry ingredients (dry-buttermilk-dry-buttermilk-dry). Once thoroughly blended, fold in the chopped hazelnuts. <br />
<br />
Pour into parchment-lined or greased mini loaf pans for 45 minutes (50-55 minutes for a standard size loaf). Once browned on top, pull the loaves out of the oven and place on a wire rack. Once cool enough to handle, slice up and enjoy! Over a year has passed since I planned this little birthday party for my daughter, Sophie. I hoped to share these images with you much sooner, but you know how life goes sometimes. Things just manage to get in the way, now don't they? I have to admit, I relish in that fact that at least one of my children still enjoys a homespun party (I'll be riding that train as long as possible!). </div>

Just before she turned six last year, we discussed the type of party she wanted. She was emphatic about having a Hello Kitty Birthday Party, which initially I had no idea how to pull off without being tacky. Thankfully, she's the cutest licensed character of them all. Also, thank goodness she is often accompanied by polka dots. </div>

While guests arrived, I led the girls to a little craft table in the family room, where they each made their own Hello Kitty mask. This type of distraction gave the littles a chance to channel all their energy towards creating something of their own. The craft wasn't fancy or complicated, just something short and sweet to amuse them for the first fifteen minutes. The alternative is your home turning into a bounce house... :) </div>

I used some pretty spoons I already owned for mini serving ware. Napkins were simple, white and from the local grocery store. I simply stamped them and used a bit of baker's twine as an accent. Super easy! </div>

These basics create a clean, flexible base for each party. Add in fun paper, ribbon, flowers, balloons, garlands, straws, etc. and you have a "new" party each time. Another money saver is to make the cake or cupcakes from scratch, versus buying them elsewhere. The star of the dessert table can be a real money suck and since cupcakes are so simple to make, go ahead and give 'em a shot. If you can make easy muffins, you can make a basic cupcake recipe. Promise! </div>

In order to fill up the table with treats and make it feel special, I supplemented the homemade cupcakes with some store bought treats as well. When you have a Trader Joe's nearby, it's pretty easy to stay on budget and fill up your cart :) It's the best. Anyway, I found some pretty vanilla meringues (the girls loved these!) and yogurt covered pretzels from TJ's, as well as a bunch of Pocky sticks from Daiso (where everything is $!). </div>

Since renovating <a href="http://www.stephmodo.com/2009/09/project-la-maisonnette-du-coteau.html" target="_blank">our little maisonette</a> in the Medieval town of <a href="http://www.vrbo.com/255275" target="_blank">Beynac, France</a>, I've wanted to share something very special with you--a little secret, or rather, an undiscovered treasure.</div>

This small, picturesque village situated on a steep cliff, has been a destination for artists since the 19th century. We know for certain that French Impressionist painter, Paul Signac sojourned in Beynac; and we also know that another French Impressionist, Camille Pisarro, spent time in our village back in the 1800's. I was recently thrilled to discover, via one of our guests, that one of my favorite photographers, Henri Cartier-Bresson, also visited and photographed Beynac back in the 60's. What I wouldn't give to take a walk with him down the bumpy, cobblestone paths. </div>

Carrying on the artistic heritage in Beynac today, is an amazingly talented painter named <a href="http://www.artpierre.com/?l=1" target="_blank">Pierre Van Dijk</a>. His paintings are the most exquisite contemporary works I've seen. I see as much beauty in Pierre's paintings as I do when visiting the Museé Marmottan in Paris (definitely a must-see!). And the beautiful part of this story is that he is not only an exceptional artist, but he is a kind person (and so is his lovely wife). We are grateful to call them friends and for the incredible beauty and warmth their presence adds to the village. I share these things because catching a glimpse of a person's heart and soul is important to me when purchasing art--it's part of the whole package, you know?</div>

One afternoon during a recent visit, I spent two afternoons walking the paths of Beynac, capturing the beauty of the village and of Pierre's work, for the express purpose of sharing it with you today. Needless to say, it wasn't difficult :) It is no wonder Pierre settled here to paint. There is inspiration around every corner. <br />

His "atelier", or workshop, is particularly delightful. A solid wood easel is settled next to the window where always a lovely painting is perched. Finished works are displayed on the walls and in the window on pretty days (see above). Sometimes his wife Ellie adds a cheerful vase of flowers--a sight that always makes me happy upon passing. <br />

Two nights ago, when pressing publish on this post, something happened and I lost virtually everything I'd spent hours creating. It was really upsetting to me, particularly after a seven-week blog hiatus, but I quickly realized that the best thing to do was shut down my computer and call it a night. Sometimes, that's all we can do, right? What a blessing it is to have the opportunity to start over the next day. <br />

My original post was written during some lighter moments, so I'd confessed to having this funny anxiety about making homemade pie crust (am I the only one?!), the good times had while "testing" this recipe and the fond memories that these special ingredients--pumpkin, hazelnut and eggnog--evoke this time of year. But alas, it doesn't feel genuine to try and recreate those words after the fact, so I am just going to go ahead and share with you this delicious, pumpkin pie recipe--one I've thoroughly enjoyed creating in my own kitchen. And given the upcoming holiday season, I don't want to wait another day!<br />

This pie highlights my favorite autumnal flavors and is even better the next day; so feel free to make it ahead of time and then chill in the fridge. Oh, and don't forget to save yourself a slice for breakfast the next day. What? You've never treated yourself to cold, pumpkin pie for breakfast? Oh honey, don't deny yourself this experience another year and just go for it (think of me when you take that first bite!). The smooth, spiced pumpkin filling underneath a delicate ring of candied hazelnuts is about the best thing ever in my book. Add in a generous dollop of eggnog whipped cream before serving and it's pretty much heaven-on-a-plate. I try not to think about all the years I've denied myself eggnog whipped cream during the holidays and have vowed to make up for it in the next 37 years of my life! Who knew how easy it was to make?<br />

You'll notice the recipe calls for a frozen pie crust...blasphemous, I know. But, since it was important to me to keep the recipe super approachable, this is how I created it. That being said, homemade pie crust is absolutely incredible, so baking this pie in a made-from-scratch-shell will only amplify the goodness. If you do go to the trouble, be sure to double your recipe and freeze the remaining dough for next time! You'll be so grateful to save a step in the future. Enjoy, my friends!<br />

<b>Spiced Pumpkin Pie with Candied Hazelnuts and Eggnog Whipped Cream</b><br />
<b><br /></b>
<i>Makes 1 pie / 8 servings</i><br />
<br />
15 oz can organic pumpkin pureé<br />
3/4 c. light brown sugar, packed<br />
3 eggs<br />
1 1/2 teaspoon ground cinnamon<br />
1/2 teaspoon ground ginger<br />
1/4 teaspoon ground cloves<br />
1/4 teaspoon fresh ground nutmeg<br />
1/2 teaspoon good sea salt<br />
1/2 c. whole milk<br />
3/4 c. heavy cream<br />
1 deep dish frozen pie crust<br />
<b><br /></b>
<b>Candied Hazelnuts</b>:<br />
<br />
2 tablespoons light brown sugar, packed<br />
1/2 teaspoon ground cinnamon<br />
1/4 teaspoon fresh ground nutmeg<br />
pinch good sea salt<br />
1/2 c. hazelnuts, chopped<br />
1 tablespoon unsalted butter, melted<br />

METHOD:<br />
<br />
Preheat your oven to 375 degrees.<br />
<br />
Place the pumpkin pureé in a medium bowl. Add the brown sugar and eggs before whisking until smooth. Add the spices and salt and then whisk again until thoroughly blended. Pour in the whole milk and then heavy cream and complete one last cycle of whisking until smooth. <br />
<br />
Place a baking sheet on the middle rack of your preheated oven. Set the frozen pie crust atop the baking sheet and inch it out just a little, so you can pour the pumpkin pie filling directly into the pie crust. This will assure that you don't spill the filling all over the floor between counter and oven (which is a mess I can attest to!). Bake the pie for 25 minutes. While the pie is baking, start making the candied hazelnuts.<br />
<br />
In a small bowl, sprinkle in all of the spices and the pinch of salt. Mix well with a spoon. Toss in the chopped hazelnuts and then pour the melted butter over the nuts. Mix until the hazelnuts are thoroughly coated. Set aside until the pie has baked for 25 minutes. Then, open the oven door and inch out the baking sheet again. Sprinkle the hazelnut mixture around the edges of the pie, creating a pretty ring. Turn down the heat to 350 degrees and bake for an additional 30 minutes (or until jiggly in the very center). <br />
<br />
Once the pie is done, take it out of the oven and place it gently on a wire rack to cool. Once cooled, cover and place in the fridge until you are ready to serve with the eggnog whipped cream.<br />

<b>Eggnog Whipped Cream</b>:<br />
<br />
1/2 c. heavy cream<br />
1/3 c. eggnog*<br />
3/4 teaspoon sugar<br />
<br />
Chill bowl and whisk attachment in freezer for ten minutes (this step allows the whipped cream to set faster). Retrieve from the freezer and pour in the cream, eggnog and sugar. Mix on medium/high until soft peaks form. Cover and place the bowl of eggnog whipped cream <span style="text-align: center;">in the fridge to chill until it's time for dessert. Bon appétit!</span><br />

Hello, friends! Meet my new favorite apple crisp (also known as breakfast, lunch and dinner--not kidding!). Last week after school, we visited an apple orchard and somehow managed to come home with thirty pounds of delicious, Honeycrisp apples (see image on <a href="http://instagram.com/stephmodo" target="_blank">instagram</a>). Is there anything quite like an apple straight off the tree? I daresay not. If you live within an hour or two of an apple orchard, I highly recommend a trip this month. It's a wonderful experience, particularly if you have littles with you. <br />

My love affair with food began as a child (I was deemed "starving stephanie" by my aunties and cousins because of my seemingly endless appetite), but the relationship really blew up when I lived in San Francisco. With a thrice-weekly farmer's market, a generally high standard for anything involving edible consumption, and a food-related work environment (I worked at Williams Sonoma's corporate office and my desk was right across from the test chef!), it was simply unavoidable.<br />

One particular block in the Mission is particularly delicious as it's home to <a href="http://biritecreamery.com/" target="_blank">Bi-Rite Creamery</a> + Grocery and <a href="http://www.tartinebakery.com/" target="_blank">Tartine</a>. There is an ever-present line at Tartine, but with good reason...everything there is scrumptious (please know it is worth the wait!). The food is amazing and the bread is better than most boulangeries in France (just read the inspiring introduction and you will understand why). If anyone is going to make a breadmaker out of me, it's going to be Chad Robertson!<br />
