Menu for the Week

I'm trying (key word being "trying") to return to my old cooking habits. Since having #3 we've consumed an exorbitant amount of quesadillas and the like and this week I've reached my limit. Tonight I created a menu for the next week that I think is manageable and delicious. I'm excited already! Great food is one of my favorite things...what can I say?

As you read this menu you may think I am aiming too high, and perhaps I am, but we'll give it a go anyway. For my weekly menus I like to combine a few old favorites with a few new recipes to mix it up a bit. Recipes with an asterix are new recipes.

Here's to a week of yummy food!

* Chilled Beet Soup with Dill Cream, baguette, salad

Southwestern Salad with Shredded Chicken

Linguine with Peas, Chives & Pancetta

Baked Ziti with Sausage, Tomatoes, Spinach , baguette, salad

* Almond and Spice-Crusted Grilled Salmon & Herbed Couscous

* Dessert: Fresh Apricot Crisp
