Pomegranate "Nojito"

In Napa Valley (St. Helena specifically), there is a yummy restaurant called Market. I've consumed some wonderful things there--the latest? A "Nojito", a.k.a. a Virgin Mojito.

Although I'm not a mixologist by trade, I did attempt to recreate the drink today with the added ingredient of POM juice. Here is my recipe for a Pomegranate "Nojito":

Pomegranate Nojito

45 mint leaves
3 tsp. raw sugar (approx. 3 packets)
4 to 5 oz of fresh squeezed lime juice
2 oz Simple Syrup
8 oz ginger ale
4 oz POM juice
lots of crushed ice
mint and lime wedges for garnish

Mix first four ingredients together and stir for a few minutes. Place ice in cups or pitcher. Add mint mixture to the ice before adding POM and ginger ale. Makes 4 drinks approximately

*Variation: Add POM Pomegranate Blueberry juice instead and also garnish with fresh blueberries
