For the past few years my neighbor Kate and I have been swapping dinners on and off. Just a few weeks ago we decided to resume this wonderful tradition. This is what I made for her family this week:
Seared Herbed Salmon
Roasted Potatoes with Fresh Herbs
Fresh Corn Salad
Garden Salad
Baguette
Banana Cream Pie for dessert (yes I made another one...)
I can't wait to see what she brings next week! You guys should do this with your friends/neighbors too! It takes minimal effort to simply double the meal you are already preparing for your own family.
Caveat: To get that crispy crust on the outside of the salmon, put a few tablespoons of olive oil in a cast iron pan and turn the heat to medium high for a few minutes. Then place the fillets in the pan and cook for about 4 minutes on each side.
I love this! When we lived in Charlottesville, VA we did this with 5 friends!! We would just have the others pick up the meal at our house. It was awesome--like a restaurant every night, and you barely had any dishes! I miss is so much now that we have moved.
