After Robin (a dear and very trustworthy friend) clued me in on the dangers of partially hydrogenated oils, I am trying to steer clear of boxed mixes. My genes don't allow such indulgences unfortunately (thanks Mom and Dad!). But, giving up mixes also means finding a new lemon cupcake recipe...
I browsed different recipes online before deciding on this one. It was moist (even after a few days which is sometimes unusual for cake recipes from scratch) and light and all around a good lemon cupcake. This frosting recipe is a wonderful accompaniment as well. I brought a few of these cupcakes to E.'s teachers and they begged for the frosting recipe. Real Simple (love that mag) created a real keeper. Every now and again I'll go for extra points in presentation and take the time to make candied lemon peel. It's not only edible, it's tasty too; and looks pretty atop the cupcakes.
After making the cupcakes, I packaged a few in these containers I received from the generous and fabulous Miss Marilyn in my Spring Swap package. I am pretty sure she picked them up here :) It was so fun putting these together and completely reaffirmed my love for Swaps. So far I'm 3 for 3.

I never thought that it made a difference until I tried making Toba Garrett's Moist Yellow Cake with disastrous, eggy results. And I love the box! I can't wait for the site to be back up...I think she's on maternity leave?

Re: the eggs, I think I used large eggs, but it's been awhile since I made them so I'm not certain. However, I typically only buy large eggs so I'm guessing that's a safe bet. Good luck! If you have time try those candied lemon peels...they add a lot of presentation elements and are not difficult or time consuming. Enjoy!
