Winter Squash Soup

These blue pots are really coming in handy, I must say (still kicking myself for not tracking down more). I made a batch of my favorite squash soup and used them as little serving pieces. My husband is not a squash soup fan, but even he loves this recipe. Needless to say I make it a few times every Autumn...especially when Costco stocks conveniently packaged cubed squash. Talk about a time saver! Once you buy your pre-cubed squash, all you'll need to do is cube a couple of acorn squash and you're good to go. I garnish mine with a dollop of creme fraiche (or sour cream if unavailable) and a sage leaf.

For those of you who've eaten at The Sentinel in San Francisco, do you know of a squash soup recipe that mimics the one they serve there? It's quite different from this version but very tasty as well.

  4. When you next visit the SF Bay Area you may want to make a side trip to San Mateo to visit The Gourmet Corner; you will find this yogurt there. I love the yogurt and use the containers as serving pieces and table decorations. Perhaps the folks at the The Gourmet Corner can also tell you where else you can find this yogurt in the U.S.

  5. i love the sentinel but i've never tried their soup! i'll have to go go check it out. i just cut up a big butternut squash and was debating today about exactly what to make. saw that exact recipe at epicurious as well! have you ever made a pasta dish with it? i've wanted to try something like that

  7. This was my favorite squash soup recipe for years. But. . . For the last 2 years I've been making Golden Winter Soup from Cooking Light, and I think it is even better (and easier). Definitely make the Gruyere toast to go with it. Delicious!
