Menu of the Week: Easy, Peasy

Since our family has officially consumed its frozen-pizza quota for the year in just 3 months, I'm forcing myself to start cooking again. I am finding that even the simplest of meals take a lot of time right now (I am so rusty!), but I am trying not to be too frustrated with this reality. Honestly, I am just grateful to be able to eat food again, even if it takes me 2 hours to make something that normally only takes 45 minutes to prepare! I am reminded what a commitment it is to make homemade food.

Therefore, this week's theme was "easy" and "tried-and-true", meaning no new recipes...just old favorites that I'm familiar with. Baby steps...

Couscous + Parsley Crusted Mahi-Mahi with Arugula Salad + Lemon Vinaigrette (sans prosciutto this time)

Vegetable Stir Fry with Rice (loving our new rice cooker) - thrown together with whatever veggies we have

Cheddar Corn Chowder (a great way to use up that huge mama bag of organic corn from Costco and perfect for that one rainy day this week)

Rigatoni with Sausage + Zucchini

Also, I'm including a freezer meal for those last-minute emergencies. I like to make Big Batch Vegetable Soup, but add some ground beef too (this will be my first time making it with grass-fed beef--curious to see if there is improvement in taste). Then, I divide it up into separate freezer Ziploc bags and stock away for future use!

  2. ditto to "birdie in DC". My menu for the week includes eating lots of foie gras and French pastries without cooking for myself at all. ;)
