I've had to cut down significantly on my "to-do" list as of late; however, I'm not willing to give up good food. My family needs it, my baby needs it, and therefore I need it :)

Grown Up Mac n' Cheese - everyone in the family loved this dish. I'll admit I was a bit skeptical of a GH recipe, but when I saw the words, "fontina", "pancetta" and "Pecorino", I figured it must be good...and it was.

Grilled Fish Tacos - yes, we are making these again :)

Spaghetti with Quick Meat Sauce - I doubled the recipe, but shaved off 1/2 lb. beef. Thought it very balanced this way.

Parmesan Toasts with Asparagus, Egg & Prosciutto - an easy dinner recipe to be sure, but also works as a brunch recipe too. We had a few leftover toasts with just parm and prosciutto, so we saved them in the fridge for snacks the next day.

Easy Cassoulet - still messing around with this recipe, but love the idea of quick-to-make cassoulet. It's an excellent French dish, but I'm not up for making it the traditional way on a weeknight.

  1. Hey Steph, I love your menu of the week posts. I should just copy your menu every week and save myself a bunch of time :) I'm making the Rigatoni with Sausage tonight from your post a couple weeks ago. Can't wait to try it!

  4. Thanks for the weekly inspiration! I can't tell you how many times with regards to dinner. I found a great cassoulet recipe at Cook's Illustrated -- http://www.cooksillustrated.com/recipes/login.asp?docid=20860&extcode=M**ASCA00. I haven't tried it yet, but I got a subscription to this magazine from my father in law and everything I've tried - esp. their gazpacho recipe has been divine.
