Roasted Beet Salad with Chevre, Hazelnuts + Fennel

I've been craving beets like crazy...it's probably a sign of some kind of vitamin deficiency as beets are one of the most nutritional foods around. This salad incorporates all of the ingredients I love to eat alongside roasted beets! If you've never given beets a try, you should start with this simple, delicious salad. Served with a crusty roll, it's truly the perfect, healthy lunch!

I've had beets exactly once. They were served as part of a multi-course meal in Frankenmuth, MI. They tasted like dirt.

My husband actually gave me $5 to try them after his ever so eloquent "Wow, these things taste exactly like dirt. You have to try it."

I'm scared to give them a second go.

Mmmmm....that photograph is making me hungry! If you're craving beets, btw, you should try making Saltibarsciai, a traditional Lithuanian cold beet soup. Sounds disgusting (especially if you look it up and see how bright pink it is, haha!), but it's DELICIOUS and the perfect summer meal. (okay, so it's not actually summer yet, but we're only about five months away!). Great blog, btw!
