Lately I find myself eating this easy, yummy, and very healthy lunch...greek salad and pita. I crisp romaine lettuce, add some cucumbers, tomatoes (if on hand), any other good salad veggies, s&p, and feta cheese (Bulgarian and French are the best). Then I throw on some good quality balsamic vinegar and olive oil. Voila, an easy, tasty lunch. I might even feed it to my kids next time given the recent finding that they do in fact like feta cheese. I'm surprised to be honest...I doubt I did when I was a wee tot! Warmed pita is a nice accompaniment too. Sometimes I cut the pita into wedges, toss with EVOO (so Rachel Ray I know...), s&p, and then in the oven on 350 degrees for 7 minutes approximately.
