This dessert was my contribution to a fun New Year's Day dinner with friends. I really liked it, being a huge coconut fan and all. Next time, to make it a bit more firm, I'll add a little extra tapioca and also a little lime zest. This pudding is the perfect accompaniment to an Asian-style meal. I'll definitely make it again, especially since it was pretty easy to make.

Caveat: I made this again two days later but inadvertently omitted the sugar. Big oops. I'm off to make it a third time this week because I've been craving it since New Year's Day and this time I'll do it up right :)
