Menu of the Week

It's funny, this "Menu of the Week" thing...given that I actually create a menu only once every two weeks :) One week I'm really motivated to eat well and therefore I cook well. But it's difficult to pull off with 3 kids, so I am usually burned out after one week of cooking nice meals. The next week we subsist on frozen pizza, take out, "brupper" (breakfast for supper), etc. Then after a week of that I'm sick of eating in such a way so I go back to planning a nice menu.

And the cycle continues....

Rosemary & Garlic Studded Leg of Lamb (1st lamb venture) with Rosemary Flageolets (substituting navy beans--can't find flageolets in SLC)

Cauliflower and Ham Gratin, Salad, Fruit

Vegetable Beef Soup, (I add 1 lb. of ground beef to original recipe; freezes well too), Virginia Light Rolls

Cobb Salad with Garlic Vinaigrette & a crusty loaf of bread

Black Bean Burritos with Garlic, Cumin & Cilantro; Salad with Avocado & Cilantro; Spanish Rice

Grilled Red Snapper with Lemon Fingerling Potatoes, Steamed Broccoli

  2. you and I are kindred eaters...tell me about the cauliflower gratin...I've looked at the recipe many times but haven't tried it yet. Now I'm motivated, as we had frozen pizza last night...
