Something Sweet for Your Sweetie

• 12 February 2008

My stepmom brought back a beautiful magazine from Australia for me recently--Delicious magazine. It was recently voted World's Best Food magazine and she knows that's right up my alley. It reminds me of a Gourmet or Food & Wine; but of course it's different given that it's Australian and not American. I love the overall feel.

Unfortunately, subscriptions are not available in the US but perhaps at our local Barnes & Noble? Has anyone seen this before?

I found this recipe on their website under the "Ask Valli" column. It sounds divine. It's on my "to-do" list when I get back. I have a few other things up my sleeve for Valentine's Day plans...(see Thursdays post)

Valentine’s Day Chocolate Puddings

Makes 4 (two for you and two for him!)

1 cup (150g) self-raising flour
1/3 cup (35g) cocoa
½ cup (110g) caster sugar
½ cup (125ml) milk
1 egg, lightly beaten
60g unsalted butter, melted
½ tsp vanilla extract
½ firmly packed cup (100g) brown sugar
Icing sugar, to dust
Vanilla ice cream, to serve

Preheat the oven to 180°C. Lightly grease four 1 cup (250ml) ramekins. Sift the flour, half the cocoa and a pinch of salt into a large bowl, then stir in the caster sugar. In a separate bowl or jug, whisk together the milk, egg, melted butter and vanilla. Stir the liquid into the dry ingredients. Divide the mixture between the ramekins. Place them on a flat baking tray. In a bowl, combine brown sugar and remaining cocoa, then sprinkle on top of the puddings. Bring 1 cup (250ml) water to the boil and pour enough over each pudding until the ramekins are three-quarters full. Bake for 20-25 minutes until the puddings have risen. Dust with icing sugar and serve with vanilla ice cream and a kiss!
