Fresh Apricot Crisp

I clipped this recipe from Sunset last year, put it in my recipe binder, and then waited for apricot season to arrive again. While at Costco last week, I noticed a full try of apricots, perfectly ripened. I decided it was high time to make this seemingly delicious recipe.

It did not disappoint.

I used individual bakers, because they are honestly just fun to use, and served it with Ben & Jerrys Vanilla ice cream (voted #1 in last year's Real Simple taste test). YUM! The recipe calls for Blenheim apricots but those are not available in my area so I used conventional apricots. When the summer evenings become cool, it's nice to have a warm crisp with a cool scoop of ice cream. Happy Summer!
