Nothing beats a garden tomato and this is the time of year to enjoy these sweet, plump, delicious vegetables...well, technically it's a fruit but since the Supreme Court officially deemed it a veggie almost one hundred years ago, we'll go with that :)
A few days ago I purchased a bucket of beautiful, ripe tomatoes from a local farm stand for $3 (Harward Farms on 21st S. and 13th E.) and made a large batch of this soup. My oldest daughter declared it the "best soup I've ever had". I'm not sure I'd go that far but it was a delicious recipe and is now my standby tomato soup recipe. As an added bonus this recipe is quite easy to make. I opted to forgo the parmesan crisps for the sake of time but I'm sure they would be delicious. Maybe next time...
