Simple Italian Feast

I recently prepared a simple Italian-ish-themed meal and decided it was well worth repeating. While tasty, the meal itself is not difficult to make...a superb combination don't you think?

1. Insalata di Arugula, courtesy of Salt Lake's Cucina Toscana...my new favorite salad!
2. Scallops in Parchment (don't forget to sear the scallops first--tres important!)
3. Rigatoni with Sausage & Peas (locally, Harmons makes the best homemade sausage)
4. Artisan Ciabatta
5. Fresh fruit for dessert

Insalata di Arugola
Cucina Toscana, SLC

4 bunches baby arugula (1-1.5 containers
Juice of 2 lemons
1/4 cup extra-virgin olive oil
Salt to taste
8 thin slices of prosciutto di Parma
Shaved, fresh Parmigiano-Reggiano
Honey to taste (use best quality like this kind)

In a mixing bowl, mix lemon juice, olive oil and salt. Toss baby arugula in the dressing. Drizzle honey over top and then toss lightly again. Plate salad on 4 plates and top with 2 slices of prosciutto and fresh Parmigiano shavings.


Pappardelle with Sausage & Peas

10 oz. pasta (or more if you like your pasta less "saucy")
1/2 lb. sausage, casings removed
1 cup heavy cream
1/2 cup shelled peas
Salt & pepper to taste
1/2 cup freshly grated Parmigiano-Reggiano

Warm a large nonstick frying pan over medium heat. Add the sausage meat and cook, stirring to break up any lumps, until no longer pink but not browned, about 5 minutes. Using a slotted spoon, transfer to cutting board and chop.

Wipe out the pan and place over medium heat. Return the sausage to the pan along with the cream and bring to a simmer. Cook until the cream thickens, about 5 minutes. Add the peas, salt and pepper and simmer until the peas are tender and the flavors are blended, about 5 minutes longer.

Meanwhile, bring a large pot three-fourths full of water to a boil. Add the pasta and salt to taste and cook, stirring frequently, until al dente. Drain well.

Place the pasta in a warmed shallow serving bowl. Add the sauce and toss to mix evenly. Add the cheese and toss again. Serve immediately.
