Golden Winter Soup (per reader recommendation), salad, crusty baguette

Campanelle with Pesto, Potatoes & Green Beans, salad, fruit

Almond-Crusted Sole, herb roasted red rotatoes, steamed broccoli

Slow Cooker Chicken Tacos with Avocado + Sour Cream (throw 3 chicken breasts & one can La CosteƱa salsa into slow cooker on low for 6 hours); Southwestern Salad (vegetarian version)

Homemade Pizza, salad, fruit wedges

"Brupper"...I know I'm not the only out there who makes breakfast for supper occasionally!

p.s. if you care to read some tips on meal planning, read this post. You'll save money and eat better...promise.

  1. I loved your meal planning tips. I recently started taking your advice and not only do I eat healthier but I save tons of money! I've even noticed that I still cook even though I have a crazy busy schedule, because I already know what to make and have every thing I need.
    I've also started prepping for some of the meals at the beginning of the week so on days that are too busy to spend time cooking, I already have things ready to go.

  2. I can't remember how I found your blog ~ a link maybe? ~ but I absolutely love it! I made Best Ever Chinese Chicken Salad for dinner last night and it was so good!!! A friend gave me some acorn and butternut squash from her garden this week so I made Winter Squash Soup this morning and have already taken some to two friends. The recipe is amazing! I'm becoming inspired to cook better for my husband and five kids through reading your blog. Inspiration for my home is surely next :) Thank you for sharing your beautiful life!

  4. thanks a ton for posting meal planning tips! i have an 18 month old and have just started grad school so meals are just hard but i'm trying hard to plan over the weekend so we get healthy, fresh food everyday!
    looking forward to trying out your recipes, especially the homemade pizza

  6. Golden Winter Soup is my most favorite soup recipe. And because of you I now know to look for pre-cut squash at Costco! It makes it so much easier than trying to cut up a butternut squash. I put in half the amount of half and half that it calls for - it's plenty.
