What we are eating and have eaten this week...with a few notes. I hope that sharing these will inspire you to whip out those cookbooks sitting on your shelf :)

Shepherd's Pie , salad with vinaigrette - the best version of this dish I've found; also, I know what you are thinking...shepherd's pie in May? Well, yes...if it's 45 degrees and raining!
(note: added a TB sour cream, substituted 1 lb. grass fed beef for the lamb)

"Brupper" (breakfast for supper) - eggs w/chives, salsa, avocado, wheat toast perhaps?

Fish Tacos, fresh fruit salad, rice

Rigatoni with Sausage, Peas, Zucchini + Mushrooms
, salad

Caramelized Pineapple with Coconut Sorbet - there is no other dessert that can be prepared in 5 minutes that will taste this good. Just ask my neighbors.

  1. All of these sound delicious. We've been in a bit of a food rut at home lately, always eating what feels like the same 3 or 4 meals. Great ideas, I'll have to try some of these soon! (Especially fish tacos!)

  4. since you are the go-to girl, i thought maybe you'd know how to cook fish without the entire house smelling. we love our fish around here, but my washed clothes are inviting questions from others about last nights' dinner, even though it was almost a week ago.

  5. We love breakfast for dinner at my house but hadn't tried it in awhile. The other night my 17 year-old son requested Huevos Rancheros and so we used this sure bet from SUNSET Magazine http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1947672
    I picked up refried beans from our favorite Mexican restaurant as a treat but canned work great. Or use whole black beans to keep things a little bit healthy.

  6. Angela, thank you for reminding me of that recipe in Sunset. I need to make that too!

    Stacey, when I cook my fish I actually fire up the grill outside (even in the winter or rain I go out there) and place my cast iron pan on the grill and cook the fish outside. I love the way the cast iron sears the outside so nicely, plus I keep my kitchen pretty fishy-smell-free!
