Last weekend while I attempted to "take it easy", my husband took our 3 children camping down south. I was bummed to miss out on the fun, but camping in one's 3rd trimester + early contractions don't exactly compute. It will be fun to return to this same spot all together as a family at some point...my kids apparently had a great time romping through caves with a Jr. Ranger, climbing trees, collecting rocks and of course digging in dirt.
Before the family took off with the teardrop trailer in tow, I helped my husband throw together some tin foil dinners. Boy those dinners taste like heaven when you're camping. Add in a crackling fire and beautiful setting and you have yourself one memorable meal. Not only are tin foil dinners simple to make, but they are easy to cook as well.
