How to Roast Beets

While walking through a farmer's market recently with a friend (or maybe it was more like waddling?!), she asked me about the preparation of beets. I agreed they can be an intimidating vegetable with all those fronds and fuzzies. Well, I have a simple roasting method to share with you today over at Zupas--you'll have those delicious, beautiful beets from farm to table in 5 minutes! I'm really into these 5-minute specials lately, can you tell? Oh, and I'll also pass along my favorite salad recipe with roasted beets too. You'll definitely want to keep this recipe on hand for a nice meal.

ReplyDeletei roasted some beetroot last night after reading this. it was so good. i often make a salad of grated raw beetroot, grated fennel, some mint and whatever dressing you like. its a great mix especially with a piece of salmon!
