A couple of years ago when all this La Maisonette business began, I struck up a cooking friendship with a Frenchwoman named Danièle Mazet-Delpeuch--one of the most interesting women I've met to date (I've detailed our cooking experiences here, here and here--can you tell I like this lady?). Oh my she is a treasure trove of knowledge and skill! One of the many tips she's given me over the years is regarding a special spice called Piment d'Espelette.
