A couple of years ago when all this La Maisonette business began, I struck up a cooking friendship with a Frenchwoman named Danièle Mazet-Delpeuch--one of the most interesting women I've met to date (I've detailed our cooking experiences here, here and here--can you tell I like this lady?). Oh my she is a treasure trove of knowledge and skill! One of the many tips she's given me over the years is regarding a special spice called Piment d'Espelette. It's fast become my new secret spice and I'm sharing the 4-1-1 over at the Cafe Zupas blog, including how to incorporate it into your everyday cooking.
