Salade Niçoise, Breadcrumbs + the Best Roast Chicken Recipe

It occurred to me this weekend that I haven't shared any of the recipes I posted on Cafe Zupas this month.  Oops! So what that means is that I have more than one to share with you today--a  combination of old and new favorites and definitely what I'd call "keepers".  Enjoy!

Salade Niçoise with a Shallot Vinaigrette - During the workshop with Aran, I created a variation of this classic French meal for lunch one day. The sun shone outside and we gathered around a table on the lawn to enjoy every bite.   Added bonus: picky eaters will appreciate being able to pick and choose just what they want to eat.  I made a mental note to make a Salade Niçoise once a month from here on out.  It was just that good.

Lemon Herb Roast Chicken  - my go-to recipe for company and it makes your home/apartment smell amazing!!  It's basically a one-pot meal so it makes for a simplified evening of entertaining. 

How to Make Homemade Breadcrumbs - because good ones are so hard to find and making your own is so darn easy.  Why, oh why did I not do this earlier? This week I plan on making something yummy with a batch I recently made...I'll keep you posted!

I hope these 3 recipes bring you a few great nights in the kitchen!  Have fun and be sure to listen to some great music while you cook--it'll make your food taste that much better :)  I always enjoy oldies, Buena Vista Social Club or Puccini (random, I know).  In fact, I'd love to know what music you enjoy listening to when you cook...what are your favorites?
