Meyer Lemon Bars

• 29 December 2011

{I have to squeeze in one more treat post this month before we all start making resolutions to avoid sugar :) }

Thanks to Costco, I've enjoyed a sizable stash of Meyer lemons this week--anywhere else they seem totally unaffordable ($3/lemon, what?).  It's such a treat to have so many of them hanging around as these are what my winter dreams are made of.  Meyers exude the loveliest fragrance and I'd gladly take that delicious smell wafting through my home any ol' day.

In the past couple of weeks, I've made three batches of Meyer Lemon Bars.  Yup, three!  I discovered the best lemon bar recipe on epicurious a couple years ago and love to make these in the middle of winter when all I want is something fresh.  If you use conventional lemons, these lemon bars are definitely going to be fantastic; but, when you make 'em with Meyers, they are out-of-this-world.

p.s. I recommend using a glass pyrex dish if you have one on hand.  For some reason mine always turn out better when I do.

We just put a Meyer lemon tree in our yard last summer. It has it's first batch of blossoms on it right now and it smells heavenly! I can't wait for it to give me more lemons than I know what to do with. Is that possible? It's not hard for me to find an excuse to make lemon curd - homemade angel food cake that leaves all the yolks behind is a great way :)

I recently inherited a spoon like the one in your photo. I like the way you use it and will give it a try. Happy New Year!

These look amazing! I have a whole bag of meyer lemons left over from our Christmas dinner that I've been needing to use....this recipe is perfect! I'll be making these tonight! Thanks for sharing!

I love Meyers lemons too. Making your bars and watching a new season of Masterpiece Classic is one of the few things I like about winter.

yay! Thankyou for this great recipe! We have a whole tree full of lemons (it's Summer here!) just waiting to be used and this will be project one I think! :)

Will, thank you for the kind words. It makes squeezing in a mini photo shoot amidst the daily chaos worth it when I hear feedback like that!

Amy, if you lived near me, I'd give you a few :)

Andrea, I'm jealous of your Meyer Lemon tree. I miss mine...we don't receive enough sun here in the Pacific NW to keep one alive :(

Full House, I hope your trip to Costco was successful! If they do n't have them at your local store I believe you can request them up at the front.

Angela, I bought mine at a tag sale...you? I think it's an antique but not sure.

Erin, Darcy, Allison, Allana, I think you'll like this recipe! It's my favorite.

Oooh thanks! I picked up a box of these at Costco last week with no specific recipe in mind...now I know what I'm going to do with them!

Hi Stephanie - Just wanted to let you know that I made these over the weekend and ADORED them! They didn't turn out quite as pretty as yours, but man are they yummy! I am posting about them tomorrow and will be using one of your pictures - with a proper link back of course! Thanks!
