Menu of the Week: Featuring my new Favorite Vegetarian Meal

In case you're in need of some dinnertime inspiration...I made several new things this past week as I found myself becoming a bit bored with our usual fare.  Hopefully you'll find a few things that speak to you as well!  Bon appetit mes amis!

Easy French Bistro Dinner - Because this was a meal I made often in France, it brings back so many memories when I make it here.  My children love this sauce and want to pour it on everything...and they pretty much do!  Make your own crème fraîche to save a few bucks.

Slow Cooker Tikka Masala - I'm always on the lookout for a good slow cooker meal, but find am often left disappointed.  This one was pretty good and while I enjoyed it just fine, I probably won't make it again because not everyone was on board.  If you do end up making it, don't omit the cucumber side--it's a very nice addition.

Roasted Kale with Caramelized Shallots, White Beans and Egg - this is my new favorite meal when I can find good, organic kale on sale (they say kale is one of those things you really should try to purchase in the "organic" section).  It's healthy, filling and even gluten free!  I've been happy to eat it for breakfast, lunch or dinner!

Lemon Penne with Sausage + Broccoli - When I spotted this recipe in Everyday Food, I knew I had to try it...I love sausage, broccoli and even anchovies!  It was pretty darn good, especially when I subbed in some lemon penne a friend brought back from Italy for me (thanks Christine!).  My husband was going crazy for it.  Note: I did not tell anyone it contained anchovies :)

Easy Mediterranean Lunch - except I made it for dinner :)  In fact, I've made this several times this month--mostly for lunch.  It's quick to pull together and saves me from yet another pb+j.  The feta in brine at Trader Joes is seriously awesome and I can't seem to get enough of it (the next recipe is case in point).  In the summertime, I plan on roasted tomatoes to add to this.  It's just so hard to get excited about the tomato selection at this time of year.

Poached Eggs in Tomato Sauce with Chickpeas and Feta - I think this has got to be one of my all-time favorite vegetarian meals--I say this after making it last night for the first time.  It was absolutely delicious!  And my kids all had seconds...some "thirds" and "fourths"!!  I omitted the jalopenos and subbed in diced tomatoes for the whole.  Worked like a charm and was delicious.  I will definitely be making this one again!  I served it with a loaf of crusty ciabatta and steamed broccoli on the side.  Great meal.

  9. I made the eggs in chickpeas and tomato sauce last night. I got involved in an in-depth conversation and forgot to set the timer for the eggs, so they totally got over cooked, but it was STILL utterly delicious. And so easy! Thank you for sharing these. We'll be doing a french bistro tonight (with four inches of snow on the ground:)) Happy easter, steph! xoxo

    Nora, I totally did the same thing! Next time I'll set a timer. But I agree with you wholeheartedly that it was still delicious. I honestly can't remember the last time my son asked for 4ths. And it's such a healthy meal!
