Homemade Pizza Dough in Five

If you're picking up dough at Trader Joe's or spending hours on a time-consuming pizza dough recipe, you may be interested to know you can have the best of both worlds in one recipe.  Yes, it's true...homemade, delicious pizza dough can be made in a matter of minutes.  Five to be exact.

A couple who lived a few blocks from us in San Francisco gave us the recipe when we moved from the city.  They used to live in Italy and brought this easy, delicious pizza dough recipe back with them and oh how grateful we are for that!  I've changed the recipe in a few ways, so the recipe you see below is a close adaptation.  I have to tell you that I will likely never stray to another recipe as I can't imagine anything more delicious in such a short period of time.  Lately, it's all about tasty timesavers in my kitchen :)

Homemade Pizza Dough in 5 
makes enough dough for a family of 3/4; double if your family is larger
hands on time: 5 minutes; total time is 65 minutes

1 teaspoon fine corn meal, divided (optional)
1 cup very warm water 
1 tablespoon active yeast
1 tablespoon sugar
2 1/4 cups all-purpose flour, divided
1 teaspoon coarse sea salt
1 tablespoon olive oil

Preheat the oven to 425 degrees.  Line two cookie sheets with parchment paper (optional: sprinkle each lined cookie sheet with 1/2 teaspoon of cornmeal as well).  Set aside.

Place the yeast and sugar in a small bowl.  Pour the very warm water on top and allow to sit on the counter for 5 minutes.  In another (larger) bowl, place 2 cups of flour.  Sprinkle the flour with sea salt and then drizzle the olive oil on top.  Mix.  

Once the yeast/sugar/water mixture is full and foamy, pour it on the flour mixture and mix until the dry mixture is fully incorporated.  This will take only a minute.  Cover with a damp dish towel (use hot water) and allow the dough to rise in a warm place for an hour.  

Sprinkle 1/4 cup of flour on top of the dough.  Using a spatula, move the flour around the dough, before dropping it on a lightly-floured surface.  Roll the dough out to desired shape with a rolling pin (or "throw" it like a pro if that suits you better!).  Place shaped dough on the cookie sheets and top with your favorite sauce, vegetables, meats and cheese.  Slide into the oven for 15 minutes to bake.

  1. This is so ironic! I literally JUST posted on a delicious pizza I made, but the dough didn't turn out! I used Trader Joes and followed the instructions exactly. I even cooked it twice as long as they said and it was STILL too doughy.

    The pizza toppings were soooo good, and now I can't wait to try this dough. I'm all about fast lately too.

  3. This is one of your recipes that became a staple in our home. I make pizza quite often, and always with your dough recipe. I even keep a block of mozzarella in the refrigerator, knowing I will use it. This time of year our favorite is to use fresh garlic and thin slices of roma tomato. Top with fresh basil once it comes out of the oven. It is so good. Thank you so much for sharing your recipes.

  9. I wonder if the 2.25 cups of flour is a typo? I made this tonight and it took at least an extra cup and a half of flour. Then again, I live in humid Baltimore... I love using your recipes, Stephmodo!

    Krystyn, I actually cheat and buy it from TJ's or Whole Foods. I've never found a good homemade recipe I like. Recently, in Bon Appetit, a chef recommended crushed tomatoes. I love that idea and am trying that next time for sure. Probably will do organic for best flavor since it'll be a heavy hitter.

    Anon, it may have to do with your climate. I believe it's much more humid there than here. But no, it's not a typo. 2 and 1/4 cups is definitely the way to go normally. Maybe for now you just add what you need to make it work!

(...oh seeing your tuscan photos reminds me of wonderful trips we've had there. Never has pizza, gelato or red wine tasted better than those we enjoyed there!!!) Thank you for sharing.
