I am planning on adding this gluten-free side dish to our meal this year to mix things up a bit and add some nice color. Roasted delicata squash (which truly reflects its name and is delicate indeed) melds nicely with a French spice mix, a little maple syrup, lots of crispy sage and nutty Parmigiano-Reggiano to compliment the sweetness.
