Triple Layer Coconut Cake with Lemon Curd

Recently a follower on Twitter recommended this recipe to a fellow baker; and when I spotted that "tweet", I remembered how wonderful a dessert this was to make in the Springtime. I made this for a ladies luncheon a long time ago and it was gobbled up in minutes. It looks good, tastes good, and I think people really enjoy new, unexpected flavors. And Heavens to Betsy if I can't stop talking about all the yummy ways to use lemon curd :)

ReplyDeleteI made this cake a few weeks ago. The lemon curd turned out perfect. But the cake was way too soft...I followed the directions exactly as I found them on your blog and am still wondering what I did wrong.

ReplyDeleteErin, when you say soft, do you mean crumbly or undercooked? I am trying to figure out what went awry. Perhaps cooking time or altitude issue? If you have trouble spreading the frosting or curd, try refrigerating the layers until they are fully cool and even slightly chilled. Let me know your experience :)

ReplyDeleteIt was too moist. At first I thought I must have accidentally added too much of one of the liquids but when I went back over the recipe it seems I did it right. I do live at a higher altitude, 5100 ft. Maybe I just need to try again. I ended up subbing in a boxed cake mix. (I know I should be so ashamed.) But I was in a pinch. I then did everything as you said. The gals I served it too love it. I especially liked the lemon/coconut frosting. I really think I want to transform this recipe into a cupcake...
