Blueberry Muffins

I tried my very first "Pioneer Woman" recipe this past week...I'm sure many of you are wondering what took me so long! Well, I have to say the blueberry muffin recipe I tried was delicious, but a tad too sweet for early in the morning. Do any of you have a fantastic blueberry muffin or bran muffin recipe you really love? I'm craving them both :)
My favorite Bran Muffins!

2 cups bran cereal (like 100% bran)
2 cups boiling water
And let cool.
Cream
1 cup vegetable oil
2.5 cups sugar
4 eggs
Mix In
1 quart buttermilk
4 more cups bran cereal
.5 lb. raisins
Sift
5 cups flour
1.5 tsp. salt
5 tsp. baking soda
Combine all ingredients and store in a covered container in the refrigerator. Do not stir after refrigerated. Batter will keep for 6 weeks. Bake at 400 degrees for 20 minutes whenever you want warm muffins!
I usually make my muffins from the box but I do have an amazing topping that I make every time. You mix 6 TBSP. each of flour and sugar to 3 TBSP. of softened butter (not melted). Mix it together until combined and then put it on top when you bake. They come out crunchy and sweet. They are a big favorite at our house!

ReplyDeletePreheat oven to 400 degrees
Whisk together:
2 c flour
1 Tbs baking powder
1/2 tsp salt
1/4 tsp nutmeg
Whisk together in a different bowl:
2 eggs
1 c cream (milk if preferred)
2/3 c packed light brown sugar
4 to 8 Tbs melted butter (unsalted)
1 tsp vanilla
Combine just until dry ingredients are wet. Add about 1 1/2 c blueberries (frozen or fresh). Divide batter into 12 muffin cups. Sprinkle tops with cinnamon and brown sugar. Bake for 15 minutes. Yummy!
I make the one below and either used raspberries or blueberries...whatever is in season.

This recipe is my favorite for not-too-sweet blueberry muffins. And these banana-blueberry muffins are also pretty good, if you like banana flavored baked goods.
ReplyDeleteLove all of these ideas. I have to say, I make Pioneer Woman's grilled cheese on Rye that has green chili's... can't remember name. But it is a staple and fave in our home! love it.

Years ago I read that you can eliminate 1/3 of the sugar a recipe calls for and not have it affect the texture or anything else. I have been doing this since then as most muffin recipes are too sweet for my liking. I have never had a dud yet, it works every time.

ReplyDeleteI'm always looking for healthier breakfast options. I love bran and blueberry muffins so I will have to try out some of these links for healthier versions. Its just makes for a better day when you eat a healthy breakfast that is also fun and yummy!
