Coconut Cake, Lemon Curd + Fluffy Cream Cheese Frosting

This is what my Monday morning looked/tasted like...coconut cake, lemon curd and a fluffy cream cheese frosting. You may think coconut and lemon an unlikely duo, but they actually get along quite famously!
I am sharing my recipe for this pretty cake over at Zupas today.
p.s. this is an updated version of an older coconut cake + lemon curd recipe, which is also lovely, but a little more coconut-y than this recent version.

ReplyDeleteJust finished frosting and will share tonight with high school gal pals. Not sure I put enough lemon curd in the layers so I'm bringing extra. Also, I tend to be timid when icing the layers because I'm afraid I'll run out ... how much fluffy icing do you put on each layer?
ReplyDeleteAngela, I feel the same as you. I think you just have to eye it. Err on the side of less generous in the middle so you have leftovers for the exterior.
